African   -   Kofta With Tomato And Yogurt Sauce (Egypt)   adapted from A Taste of Africa

  • 1 Pound Beef -- shredded
  • 6 Cloves Garlic -- minced
  • 1 Large Onion -- diced
  • 1 Tablespoon Tomato Paste
  • 2 Medium Eggs
  • 1 Tablespoon Cumin
  • Salt And Pepper -- to taste
  • Oil For Deep Frying
  • 10 Medium Tomatoes -- pureed
  • 4 Ounces Plain Yogurt
  • 4 Chilies -- diced
Directions 1. Combine kofta ingredients in large bowl. Mix thoroughly with hands and form into ping-pong sized balls.
2. Fry balls in oil in batches set aside on paper towelling until all are done.
3. Combine sauce ingredients, place in saucepan.
4. Add meatballs to sauce, simmer 15 minutes.
5. Serve over rice or couscous.
