African   -   Lamb With Coriander Marinade (Or Beef) (Egypt)   adapted from North African Cooking by Hilaire Walden

  • 2 Cloves Garlic -- Chopped
  • Salt And Pepper -- To Taste
  • 1 Small Red Chiles -- Chopped
  • 1/2 Teaspoon Ginger
  • 2 Tablespoons Dried Cilantro
  • 1 Tablespoon Ground Coriander
  • 1 Teaspoon Cumin
  • 1 Teaspoon Tumeric
  • 1 Cup Yogurt
  • 1 Lemon Lemon Juice
  • 1 Pound Lamb Or Beef -- Cubed
  • Cilantro -- For Garnish
Directions combine in large bowl, everything but lamb (or beef) and garnish, stir well; add lamb (or beef) to marinate and marinate overnight.
Preheat broiler or BBQ thread lamb onto skewers; and broil until done, about 5 minutes per side; seve garnished with cilantro.
