Ingredients
|
- 1 Medium Onion -- finely chopped
- 2 Medium Red Bell Pepper -- finely chopped
- 4 Large Tomatoes -- sliced
- 1 Cup Blackeyed Peas -- cooked
- 2 Cups Corn
- 1 Teaspoon Paprika
- 1 Tablespoon Olive Oil
- Salt And Pepper -- to taste

Directions
|
Saute onion in oil until well browned, add peppers and saute until limp. Add tomatoes and simmer for 5 minutes. Meanwhile combine beans, corn and salt. Add to onions and season with pepper. Mix well, cover and simmer for 15 minutes. Add water if necessary. Serve over rice.
