African   -   Nyoyo (Kenya)   adapted from The World in Your Kitchen by Troth Wells

  • 1 Medium Onion -- finely chopped
  • 2 Medium Red Bell Pepper -- finely chopped
  • 4 Large Tomatoes -- sliced
  • 1 Cup Blackeyed Peas -- cooked
  • 2 Cups Corn
  • 1 Teaspoon Paprika
  • 1 Tablespoon Olive Oil
  • Salt And Pepper -- to taste
Directions Saute onion in oil until well browned, add peppers and saute until limp. Add tomatoes and simmer for 5 minutes. Meanwhile combine beans, corn and salt. Add to onions and season with pepper. Mix well, cover and simmer for 15 minutes. Add water if necessary. Serve over rice.
