African - Palaver Chicken (Ghana)

Ingredients

- 2 Pounds Fresh Spinach
- 1 1/2 Cups Chicken Bouillon
- 2 Pounds Chicken Breast -- cubed
- 1 Large Scallion -- minced
- Salt And Pepper -- to taste
- 1/2 Cup Peanut Oil
- 2 Medium Onion -- thinly sliced
- 3 Medium Tomatoes -- chopped
- 2 Hard Boiled Eggs -- chopped
- 1 Medium Hot Green Chili Pepper -- chopped
- 1 Can Red Beans

Directions

wash and tear spinach into bite sized pieces. cook spinach in bouillon in liquid until tender. place chicken, scallion and salt and pepper in large saucpan. cover with water and cover simmer 10 minutes. saute onion, tomatoes, eggs and pepper in oil for 5 minutes. add beans, chicken, spinach and 1 cup of reserved bouillon. adjust seasonings and simmer for 45 minutes or until meat is just tender. serve hot over rice or other starch.
