African - Pumpkin Cake (Liberia)

Ingredients
|
- 1/2 Cup Butter
- 1 1/4 Cups Sugar
- 2 Medium Eggs
- 2 Cups Flour
- 3 Teaspoons Baking Powder
- 1/2 Teaspoon Cinnamon
- 1/2 Teaspoon Ground Ginger
- 1/2 Teaspoon Nutmeg
- 1/2 Teaspoon Salt
- 1 Can Pumpkin
- 3/4 Cup Milk
- 1/2 Teaspoon Club Soda
- 1/2 Cup Chopped Pecans -- optional

Directions
|
Cream together sugar and butter. Add eggs and mix well. Mix dry ingredients in separate bowl. Mix pumpkin, club soda and milk in 3rd bowl. Add bowl #2 to bowl #3 blend well. Then add this mixture to bowl 1, blend well. Add nuts if using. Pour into greased baking pan 9 x 13". Bake at 350* for 25 minutes.
