African   -   Pumpkin Cake (Liberia)   adapted from West African Cook Book by Ellen Gibson Wilson

Ingredients
  • 1/2 Cup Butter
  • 1 1/4 Cups Sugar
  • 2 Medium Eggs
  • 2 Cups Flour
  • 3 Teaspoons Baking Powder
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Ground Ginger
  • 1/2 Teaspoon Nutmeg
  • 1/2 Teaspoon Salt
  • 1 Can Pumpkin
  • 3/4 Cup Milk
  • 1/2 Teaspoon Club Soda
  • 1/2 Cup Chopped Pecans -- optional
Directions Cream together sugar and butter.
Add eggs and mix well.
Mix dry ingredients in separate bowl.
Mix pumpkin, club soda and milk in 3rd bowl.
Add bowl #2 to bowl #3 blend well. Then add this mixture to bowl 1, blend well. Add nuts if using.
Pour into greased baking pan 9 x 13".
Bake at 350* for 25 minutes.
Serves 1
