African   -   Red Palm Stew (Sierra Leone)   adapted from West African Cook Book by Ellen Gibson Wilson

Ingredients
  • 3 Pounds Chicken -- cubed
  • 1 Pound Beef -- cubed
  • 1/2 Cup Peanut Oil
  • 1 Tablespoon Paprika
  • 2 Medium Onions -- finely chopped
  • 4 Medium Chilies -- finely chopped
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Mint
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Patminger -- optional
  • 1 Can Tomato Paste
  • 1 Cup Beef Stock
  • 1 1/2 Cups Rice -- cooked
Directions Mix oil and paprika, brown meats in this oil.
Lower heat and allow to simmer 10 minutes.
Add peppers and onions to this, saute 5 mintues.
Add remainign ingredients.
Cover, simmer 30 minutes.
Serve over rice.
Serves 8
