African   -   Red Palm Stew2 (Sierra Leone)   adapted from West African Cook Book by Ellen Gibson Wilson

  • 3 Pounds Chicken -- Cubed
  • 1 Pound Beef -- Cubed
  • 4 Tablespoons Olive Oil
  • 1 Teaspoon Paprika
  • 2 Medium Onion -- Chopped
  • 2 Medium Jalapeno -- Chopped
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Teaspoon Mint
  • 1 Can Tomato Paste
  • 1 Cup Beef Stock
Directions Mix paprika with oil and saute chicken and beef til well browned. Add onions and peppers, saute 10 minutes. Add salt, pepper, mint, tomato paste and stock. Bring to a boil, cover, simmer 20 minutes, serve over rice.
