African   -   Red Pepper Paste (Ghana)   adapted from Betty Crockers New International Cookbook

Ingredients
  • 1/4 Cup Dry Red Wine
  • 1 Teaspoon Cayenne
  • Salt And Pepper -- to taste
  • 1/4 Teaspoon Ginger
  • 1/4 Teaspoon Cardamom
  • 1/4 Teaspoon Cinnamon
  • 1/4 Teaspoon Coriander
  • 1/4 Teaspoon Ground Cloves
  • 1/4 Teaspoon Nutmeg
  • 1 Small Onion -- chopped
  • 1 Clove Garlic -- chopped
  • 1/4 Cup Paprika
Directions Place all ingredients except paprika in blender, blend until smooth. Heat paprika in sauce for 1 minute at med/high heat. Stir in the mixture until smooth. Allow to cook for 3 minutes stirring occasionally. Cool.
Serves 1
