African   -   Safari Steak For The Hunter (Kenya)   adapted from The African Cookbook by Bea Sandler

  • 4 Medium Steaks
  • 2 Tablespoons Butter
  • 1 Cup Dry Red Wine
  • 1 Cup Dessert Wine
  • 2 Cloves Garlic -- Chopped
  • 1 Can Tomato Paste
  • 1 Can Beef Broth
  • 3 Cups Mashed Potatoes
  • 2 Cups Mashed Yams Or Sweet Potatoes
  • 1/4 Cup Parsley -- Chopped
Directions Saute steak in butter until desired doneness. Set aside and keep warm. Combine wines, with garlic, tomato paste and broth. Simmer until the sauce becomes thick. Stir together potates, yams or sweet potatoes. Serve steaks on the mashed vegetables, top with sauce and sprinkle with parsley.
