African   -   Shoko (Beef And Spinach) (Nigeria)   adapted from West African Cook Book by Ellen Gibson Wilson

  • 3 Tablespoons Olive Oil
  • 1 Pound Beef -- Cubed
  • 1 Can Tomatoes -- Chopped
  • 2 Medium Onion -- Chopped
  • 1 Medium Jalapeno -- Chopped
  • 1/4 Cup Egusi Seed -- Optional
  • 1 Cup Water
  • 1 Pound Spinach -- Torn
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Ginger
Directions Saute beef in oil until well browned. Add onions, peppers and tomatoes. Simmer for 5 minutes. Add egusi and water. Reduce heat to low and simmer for 1 hour. Add spinach, salt and ginger, simmer for 10 minutes and serve with rice.
