Ingredients
|
- 3 Tablespoons Olive Oil
- 1 Pound Beef -- Cubed
- 1 Can Tomatoes -- Chopped
- 2 Medium Onion -- Chopped
- 1 Medium Jalapeno -- Chopped
- 1/4 Cup Egusi Seed -- Optional
- 1 Cup Water
- 1 Pound Spinach -- Torn
- 1 Teaspoon Salt
- 1/2 Teaspoon Ginger

Directions
|
Saute beef in oil until well browned. Add onions, peppers and tomatoes. Simmer for 5 minutes. Add egusi and water. Reduce heat to low and simmer for 1 hour. Add spinach, salt and ginger, simmer for 10 minutes and serve with rice.
