African   -   Somali Crabmeat Stew   adapted from From the Lands of Figs and Olives by Salloum and Peters

Ingredients
  • 3 Tablespoons Butter
  • 1 Large Onion -- finely chopped
  • 2 Cloves Garlic -- finely chopped
  • 2 Tablespoons Cilantro -- finely chopped
  • Salt
  • 1/2 Teaspoon Ginger
  • 1/2 Teaspoon Chili Powder
  • 1/2 Teaspoon Cumin
  • 5 Medium Tomatoes -- chopped
  • 1 Pound Crabmeat
Directions Melt the butter in a frying pan and saute onion, garlic, coriander, salt, ginger, pepper and cumin. Saute until the onion is golden brown. Add tomatoes and simmer for 5 minutes. Add crab and saute over low heat for 20 minutes. Serve with rice.
Serves 4
