African   -   Somalian Crabmeat Stew   adapted from The African Cookbook by Bea Sandler

  • 1 Large Onion -- Chopped
  • 1 Teaspoon Curry Powder
  • 1 Teaspoon Ginger
  • 1 Teaspoon Salt
  • 1 Teaspoon Crushed Red Pepper
  • 3 Tablespoons Olive Oil
  • 2 Pounds Crabmeat
  • 1 Can Tomatoes -- Chopped
Directions Saute onions, curry powder, ginger, salt, and red pepper in oil for 5 minutes. Add tomatoes and simmer for 10 minutes. Add crab and saute for 10 minutes. Serve over rice.
