African   -   Tangy Pork From Ghana   adapted from West African Cook Book by Ellen Gibson Wilson

  • 4 Large Pork Chops
  • 1/4 Cup Cornmeal
  • 1 Tablespoon Oil
  • 2 Medium Onion
  • 4 Medium Tomatoes
  • 1 Teaspoon Salt
  • 1 Teaspoon Ginger
  • 1/2 Teaspoon Cayenne
  • 1/2 Teaspoon Thyme
  • 2 Medium Tomatoes -- sliced
Directions Dust pork with cornmeal.
Brown chops in oil.
Transfer tko baking dish.
Add all ingredients but sliced tomatoes and puree.
Pour over pork.
Top with sliced tomatoes and bake 1 hour at 350*.
Serves 4
