African   -   Wake-Ewa (Nigeria)   adapted from Traditional African Cooking

  • 1 Pound Blackeyed Peas
  • 1 Teaspoon Sugar
  • Salt And Pepper -- to taste
  • 3 Large Tomatoes -- sliced
  • 1 Large Onion -- chopped
  • 6 Teaspoons Peanut Oil
  • 1 Tablespoon Chili Powder
  • 1 Teaspoon Thyme
  • 1 Teaspoon Coriander -- ground
  • Salt And Pepper -- to taste
Directions In a blender, puree the tomatoes with half the onion. Heat the oil and saute the onion until golden brown. Combine the spices with the tomato mixture and add to the sauting onions. Cook for 25 minutes. Stir occasionally. Add peas, sugar and more salt and pepper. Simmer until the peas are warmed through and serve over rice.
