African   -   Yam Soup (Nigeria)   adapted from West African Cook Book by Ellen Gibson Wilson

  • 2 Tablespoons Olive Oil
  • 1 Bunch Green Onions -- Chopped
  • 2 Medium Jalapeno -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 1 Pound Yams Or Sweet Potatoes -- Cubed
  • 3 Cups Beef Stock
  • 1 Teaspoon Salt
  • 1/4 Cup Parsley -- Chopped
Directions Saute onion in oil for 5 minutes. Add peppers and tomatoes, simmer 10 minutes. Add yams, stock and salt, bring to boil, simmer 20 minutes. Sprinkle with parsley and serve.
