African   -   Yassa (Senegal)   adapted from Traditional African Cooking

  • 3 Pounds Chicken -- cut in large pieces
  • 1 Cup Balsamic Vinegar
  • 4 Large Onion -- sliced
  • 6 Large Limes
  • 2 Teaspoons Pepper
  • 1 Teaspoon Cayenne
  • 1 Tablespoon Vinegar
  • 2 Tablespoons Peanut Oil
  • Salt -- to taste
Directions Add chicken, onions, vinegar, the juice of all the limes, pepper and cayenne to a large bowl. Mix well and marinate for 30 minutes. Take the chicken out of the bowl and saute until golden brown on all sides. Add onions and fry until they are a golden brown as well. Add marinade and 1 cup of water. Simmer for 20 minutes and serve with rice.
