African   -   Beans In A Tomato Sauce (Mozambique)   adapted from Traditional African Cooking

  • 1 Can Red Beans
  • 1 Large Onion -- chopped
  • 3 Tablespoons Olive Oil
  • 3 Medium Tomatoes -- chopped
  • 1 Tablespoon Tomato Paste
  • 1 Tablespoon Garlic
  • 1/4 Teaspoon Cayenne
  • Salt And Pepper -- to taste
Directions saute onions and garlic in oil until onion is transparent. add remaining ingredients and simmer for 20 minutes. Serve over rice.
