African   -   Beef And Wild Mushrooms (Ghana)   adapted from West African Cook Book by Ellen Gibson Wilson

  • 1 Pound Variety Of Mushrooms -- sliced
  • 1 Pound Beef -- cubed
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Cayenne
  • 1/2 Cup Flour
  • 2 Tablespoons Peanut Oil
  • 1 Small Onion -- finely chopped
  • 1 Large Tomato -- finely chopped
  • 1 Cup Beef Stock -- or water
Directions Mix salt, cayene and flour in paper bag.
Add beef and shake well.
Remove beef, then repeat procedure with mushrooms.
Brown meat in oil.
Add tomato and onion. Saute 5 minutes.
Add any left over flour, stir and cook 1 minutes.
Add beef stock, cover and cook 10 minutes.
Add mushrooms, cover and cook 15 minutes.
Serves 6
