African   -   Chickpeas With Tomatoes (Libya)   adapted from From the Lands of Figs and Olives by Salloum and Peters

  • 2 Cups Chickpeas
  • 1/2 Cup Olive Oil
  • 2 Medium Bell Pepper -- finely chopped
  • 1 Medium Habenero Pepper -- finely chopped
  • 1 Large Onion -- finely chopped
  • 2 Cloves Garlic -- finely chopped
  • 1 Pound Tomatoes -- finely chopped
  • 2 Tablespoons Parsley -- finely chopped
  • Salt And Pepper -- to taste
  • 1/2 Teaspoon Basil
  • 1/2 Teaspoon Tarragon
Directions Heat oil in saucepan. Saute all peppers, onion and garlic until onion is well browned. Stir in remaining ingredients except chickpeas. Simmer for 30 minutes. Add chickpeas and heat through. Serve over rice or pasta.
