African - Coconut Bean Soup (Tanzania)

Ingredients
|
- 1 Large Onion -- Chopped
- 1 Medium Bell Pepper -- Chopped
- 1 Teaspoon Curry Powder
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 3 Tablespoons Olive Oil
- 1 Can Tomatoes -- Chopped
- 3 Cups Kidney Beans
- 2 Cups Coconut Milk
- 3 Cups Water
- 1 Cup Rice -- Cooked

Directions

Saute onion, peppers, curry powder, salt, and pepper in oil for 5 minutes. Add tomatoes and simmer for 10 minutes. Add beans, coconut milk, and water. Simmer for 5 minutes. Add rice, stir well and serve.
