African   -   Coconut Bean Soup (Tanzania)   adapted from The African Cookbook by Bea Sandler

Ingredients
  • 1 Large Onion -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 1 Teaspoon Curry Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 3 Tablespoons Olive Oil
  • 1 Can Tomatoes -- Chopped
  • 3 Cups Kidney Beans
  • 2 Cups Coconut Milk
  • 3 Cups Water
  • 1 Cup Rice -- Cooked
Directions Saute onion, peppers, curry powder, salt, and pepper in oil for 5 minutes. Add tomatoes and simmer for 10 minutes. Add beans, coconut milk, and water. Simmer for 5 minutes. Add rice, stir well and serve.
Serves 4
