African   -   Frango A Cafrial (Barbecued Chicken) (Mozambique)   adapted from The African Cookbook by Bea Sandler

Ingredients
  • 1 Teaspoon Cayenne
  • 1 Tablespoon Salt
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Ginger
  • 1 Teaspoon Paprika
  • 4 Tablespoons Olive Oil
  • 8 Pounds Chicken -- In Large Pieces
Directions Combine all ingredients but chicken. Mix well and rub over the chicken. Barbecue or broil until done. Baste occasionally. Serve with rice.
