African   -   Frango A Portuguesa (Chicken Porturguese Style) (Mozambique   adapted from The African Cookbook by Bea Sandler

  • 3 Pounds Chicken -- Cubed
  • 3 Tablespoons Butter
  • 1 Large Onion -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 2 Tablespoons Flour
  • 2 Cans Tomatoes -- Chopped
  • 1/4 Cup Sherry
  • 1 Tablespoon Salt
  • 1 Teaspoon Crushed Red Pepper
  • Rice Or Mashed Potatoes -- Cooked
Directions Saute chicken in butter until browned. Add onion and garlic. Saute for 5 minutes. Add flour. Stir well. Add tomatoes, sherry, salt and red pepper. Simmer for 30 minutes. Serve over rice or mashed potatoes.
