African - Ground Beef And Potato Sandwich (Libya)

Ingredients
|
- 8 Medium Eggs
- 1 Pound Ground Beef
- 2 Bunches Parsley -- chopped
- 1 Medium Onion -- chopped
- Salt And Pepper -- to taste
- 3 Cloves Garlic -- finely chopped
- 5 Large Potato -- sliced 1/4" thick
- 1 Cup Flour -- mixed with
- 1 Teaspoon Salt And Pepper
- Oil -- for frying

Directions

Beat 2 of the eggs and combine with the beef, parsley, onions, salt, pepper and garlic. Make sandwiches using the potato slices as bread and the meat mixture as filling. Dip each of the sandwiches into the flour. Coat well. Beat the remaining eggs with a pinch of salt and then dip each sandwich into the beaten egg. Coat again with the flour. In a frying pan, heat the oil over medium. Fry the sandwiches until both sides are well browned. Lower the temp and continue to fry for 20 minutes or until a fork can pierce all layers. Drain and serve.
