African   -   Jolllof Rice (Mali)   adapted from A Taste of Africa

Ingredients
  • 1 Pound Chicken Breasts -- diced
  • Salt And White Pepper -- to taste
  • 1 Tablespoon Olive Oil
  • 4 Cups Chicken Stock
  • 3 Large Onions -- chopped
  • 4 Cloves Garlic -- minced
  • 3 Medium Serrano Pepper -- diced
  • 4 Large Tomatoes -- chopped
  • 3 Tablespoons Tomato Paste
  • 1 Cup Vegetables -- (see note)
  • 2 Cups Rice -- cooked
  • 1/2 Teaspoon Cilantro
Directions 1. Saute onions, garlic & peppers in oil.
2. Add chicken, spices, tomatoes, paste, vegetables & some stock.
3. Boilng to boil, simmer for 25 minutes.
4. Prepare rice using stock instead of water.
5. Stir together & serve.
