African - Jolllof Rice (Mali)

Ingredients
|
- 1 Pound Chicken Breasts -- diced
- Salt And White Pepper -- to taste
- 1 Tablespoon Olive Oil
- 4 Cups Chicken Stock
- 3 Large Onions -- chopped
- 4 Cloves Garlic -- minced
- 3 Medium Serrano Pepper -- diced
- 4 Large Tomatoes -- chopped
- 3 Tablespoons Tomato Paste
- 1 Cup Vegetables -- (see note)
- 2 Cups Rice -- cooked
- 1/2 Teaspoon Cilantro

Directions
|
1. Saute onions, garlic & peppers in oil. 2. Add chicken, spices, tomatoes, paste, vegetables & some stock. 3. Boilng to boil, simmer for 25 minutes. 4. Prepare rice using stock instead of water. 5. Stir together & serve.
