Australian   -   Lobster Tagliolini With Purple Basil (Hayman Island)   adapted from Australia The Beautiful Cookbook by Elise Pascoe

  • Salt
  • 13 Ounces Tagliolini -- or thin fresh pasta
  • 3 Tablespoons Olive Oil
  • 2 Cloves Garlic -- finely chopped
  • 2 Red Chiles -- finely chopped
  • 4 Large Purple Basil Leaves -- chopped
  • 1 Can Tomatoes -- chopped
  • 2 Pounds Lobster Meat -- chopped
  • 3 Tablespoons White Wine
  • Pepper -- to taste
  • Purple Basil -- for garnish
Directions Cook pasta as directed. Saute garlic in oil 1 minute. Add chiles and basil, cook 2 minutes. Add tomatoes, simmer 15 minutes. Keep warm. In another pan , Saute lobster 3 minutes. Add wine ad reduce until wine is gone. add to tomato mixture. Season with slat and pepper. Serve over pasta sprinkle with basil.
