Australian   -   Spinach And Goat Cheese Salad (Perth)   adapted from Australia The Beautiful Cookbook by Elise Pascoe

  • 1/3 Cup Pine Nuts -- toasted
  • 1 Medium Egg -- beaten
  • 1 Medium Green Onion -- finely chopped
  • 1 Teaspoon Lemon Juice
  • 1/2 Cup Olive Oil
  • 1 Tablespoon Balsamic Vinegar
  • 2 Tablespoons Red Wine Vinegar
  • Salt And Pepper -- to taste
  • 1 Bunch Spinach -- shredded
  • 1 Bunch Basil Leaves -- shredded
  • 1/2 Pound Kervella Cheese -- hard goat cheese
  • 1/3 Cup Pine Nuts -- toasted
Directions Place pine nuts in food processor, add egg, onion and lemon juice. Puree until smooth. Gradually add the oil and vinegars. Process until smooth. Season with salt and pepper. Divide spinach and basil onto 6 plates. Spoon dressing over top, add cheese and garnish with remaining pine nuts.
Serves 6
