Australian   -   Steak And Mushroom Pie (Western Australia)   adapted from Australia The Beautiful Cookbook by Elise Pascoe

  • Flour -- for dusting
  • Salt And Pepper -- to taste
  • Nutmeg -- to taste
  • 3 Pounds Chuck Steak -- cubed
  • 2 Tablespoons Fines Herbes
  • 8 Ounces Mushroom -- quartered
  • 1 Lemon Lemon Juice
  • 2 Cups Beef Stock
  • 1 Tablespoon Catsup
  • 1 Tablespoon Worcestershire Sauce
  • 1 Sheet Frozen Puff Pastry Shell
  • 1 Medium Egg Yolk
  • 1 Pinch Salt
Directions Preheat oven to 400*. Butter a 9" pie pan. In a shallow bowl stir four, salt, pepper nutmeg. Dust beef with this mixture, place in pie pan. Scatter herbs & mushrooms next, drizzle with lemon juice. Add just enoujgh stock to cover meat & mushrooms. Stir in catsup & worcestershire sauce. Cover with sheet of pastry dough. Stir together egg & salt, brush mixture over pastry. Vent and bake 30 minutes. Place foil over top, reduce heat to 350*, bake 2 more hours.
