Australian   -   Vegetable Bruschetta (Victoria)   adapted from Australia The Beautiful Cookbook by Elise Pascoe

  • 3 Tablespoons Unsalted Butter
  • 2 Tablespoons Olive Oil
  • 1 Medium Yellow Bell Pepper -- finely chopped
  • 2 Large Roma Tomato -- finely chopped
  • 2 Large Yellow Tomatoes -- finely chopped
  • 1/4 Pound Asparagus -- chopped
  • 2 Teaspoons Parsley -- chopped
  • 2 Teaspoons Balsamic Vinegar
  • Salt And Pepper -- to taste
  • 12 Slices Baguette
  • 2 Cloves Garlic -- halved
Directions Preheat grill or broiler. In frying pan over medium, melt butter and oil. Add pepper, tomatoes and asparagus. Saute for 10 minutes. Stir in parsley and vinegar and season with salt and pepper. Remove from heat and keep warm. Broil bread on both sides until lightly golden. Rub garlic over bread and arrange on platter. Spoon mixture on top of bread and serve.
