Austrian   -   Girardi Roast Braten   adapted from Viennese Cuisine

  • 2 Tablespoons Olive Oil
  • 6 Large Sirloin Steak
  • 6 Tablespoons Smoked Ham -- finely chopped
  • 1 Large Onion -- finely chopped
  • 16 Ounces Mushroom -- finely chopped
  • 1/3 Cup Dry Whtie Wine
  • 1 Medium Bay Leaf
  • 1/2 Cup Half And Half
  • 1 Cup Beef Stock
  • 1 Tablespoon Butter
  • 1 Teaspoon Dijon Mustard
  • 1/2 Cup Parsley -- finely chopped
  • Salt And Pepper -- to taste
  • Sour Cream -- garnish
Directions Saute steak in oil untli done to your liking. Remove and set aside. Saute ham 2-3 minutes in same pan. Add onions and saute until brown. Add mushrooms, saute 5 minutes. Add wine and reduce entirely. Add bay leaf half and half and stock. Reduce by 2/3. Swirl in butter and mustard. Add parsley, salt pepper remove bay leaf serve meat topped with sauce and garnished with sour cream.
