Austrian   -   Sauerkraut Soup   adapted from central european cooking

  • 1 Pound Sauerkraut
  • 2 Medium Onion -- chopped
  • 1 Cup White Wine
  • 4 Cups Beef Broth
  • 1/2 Pound Ground Beef
  • 1/2 Teaspoon Sugar
  • Salt And Pepper -- to taste
  • 2 Tablespoons Parsley -- chopped
  • 6 Tablespoons Yogurt
Directions place sauerkraut, onions, wine and beef brothe in saucepan. simmer for 45 minutes. Shape ground beef into small meatballs and drop in soup. simmer for 10 minutes. add remaining ingredients except yogurt. place soup in bowls and top with dollop of yogurt.
Serves 6
