Asian   -   Prawn Curry (Bangladesh)   adapted from Winter Harvest Cookbook by Lane Morgan

Ingredients
  • 1/2 Pound Large Prawns
  • 2 Pounds Spinach -- Chopped
  • 3 Tablespoons Ghee
  • 1 Medium Onion -- Finely Chopped
  • 1 Clove Garlic -- Finely Chopped
  • 1 Stick Cinnamon
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Turmeric
  • 1 Teaspoon Ground Coriander
  • 2 Teaspoons Chili Powder
  • 1 Teaspoon Black Pepper
  • 1/2 Cup Tomato Paste
  • 1 Teaspoon Honey
  • 1 Teaspoon Salt
  • 1 Teaspoon Garam Masala
Directions Heat ghee in skillet, saute onion and garlic until well browned. Add cinnamon, cumin, turmeric, coriander, chili powder and black pepper. Saute for 2 minutes. Add tomato paste and honey. Cook 1 minute. Add spinach and salt. Saute for 1 minute. Add prawns and cook until pink in color. Add garam masala and cook for 2 minutes. Serve over rice.
