Algerian   -   Baked Cheese And Spinach (Slk Fel Kousha)   adapted from The Great Book of Couscous by Copeland Marks

Ingredients
  • 2 Pounds Spinach -- chopped
  • 3 Tablespoons Olive Oil
  • 1 Medium Onion -- finely chopped
  • 1/2 Pound Ground Beef
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/2 Cup Water
  • 2 Ounces Gruyere Cheese -- grated
  • 2 Tablespoons Parsley -- finely chopped
Directions Cook spinach in small amount of water for 3 minutes. Drain and press out excess liquid. Heat oil in pan, add onion and meat. Stir fry , adding salt and pepper for 3 minutes. Add water and spinach and cook for 5 minutes. Put mixture in baking dish and sprinkle with grated cheese. Bake in 350 degree oven for 10 minutes.
