Algerian   -   Djedj b'L-Qasbour (Algeria)   adapted from The African News Cookbook

  • 2 Pounds Chicken Breast -- cubed
  • 1 Tablespoon Butter
  • 4 Cloves Garlic
  • 1 Teaspoon Saffron
  • Salt And Pepper -- to taste
  • 1 Bunch Cilantro -- chopped
  • 1/2 Pound Greek Olives
  • 1 Lemon Lemon Juice
Directions Brown chicken in oil. Add garlic and spices. Saute 10 minutes. Add 1 cup water and simmer until chicken is tender. Add olives and lemon juice, simmer 8 minutes. Serve over rice or couscous
