Algerian   -   Pasta Bullets With Vegetarian Sauce (Berkoukes)   adapted from The Great Book of Couscous by Copeland Marks

Ingredients
  • 8 Cups Water
  • 2 Tablespoons Olive Oil
  • 2 Medium Tomatoes -- chopped
  • 1 Tablespoon Tomato Paste
  • 1 Medium Zucchini -- cubed
  • 1/4 Pound String Beans -- chopped
  • 1/2 Cup Green Peas
  • 1 Medium Potato -- cubed
  • 1 Medium Onion -- chopped
  • 6 Cloves Garlic -- finely chopped
  • 2 Tablespoons Cilantro -- finely chopped
  • 2 Teaspoons Mint
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1 Tablespoon Paprika
  • 1 Pound Pasta Bullets
Directions Bring water to a boil in a large pan and add all remaining ingredients, except pasta. Cook over moderate heat for 30 minutes. Rinse pasta in cold water, drain and add to the sauce. Cook for 15 minutes. Serve.
