Algerian   -   Potato Stew (Shtitha Batata)   adapted from The Great Book of Couscous by Copeland Marks

  • 2 Tablespoons Olive Oil
  • 5 Cloves Garlic -- finely chopped
  • 2 Cups Water
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Cumin
  • 1 Tablespoon Paprika
  • 1 Tablespoon Tomato Paste
  • 1 Pound Potato -- cut in rounds
Directions Heat the oil in a pan, add garlic and 1/4 cup of water and simmer for 1 minute. Add salt, pepper, cumin, paprika, tomato paste and the rest of the water. Bring to a boil, add the potatoes and cook over low ehat for about 30 mintues. Serve.
