Algerian   -   Spiced Potato Cakes   adapted from North African Cooking by Hilaire Walden

  • 2 Pounds Mashed Potato
  • 1 Tablespoon Paprika
  • 2 Teaspoons Cumin
  • 1 Pinch Cayenne
  • Salt And Pepper -- To Taste
  • 1 Bunch Cilantro -- Chopped
  • 3 Medium Eggs
  • Oil -- For Frying
Directions In a large bowl mix potatoes with the spices, cilantro, eggs and seasonings. Form mixture into patties. Cover and chill for 30 minutes. Heat a shallow layer of oil in a frying pan, add the cakes in batches and fry until crisp and brown on both sides. Drain on paper towels and serve.
