Belgian   -   Casserole Of Wild Mushrooms   adapted from Everybody Eats Well In Belgium

  • 1 Pound Mixed Mushrooms -- any kind
  • 5 Tablespoons Unsalted Butter
  • 2 Tablespoons Shallots -- finely chopped
  • Salt And Pepper -- to taste
  • 2 Tablespoons Fines Herbes
Directions Wash and clean the mushrooms and chop into chunks. Melt the butter in a large skillet over high heat. Add shallots and cook stirring until soft but not brown. add mushrooms and saute them quickly until lightly browned. This should take about 2 minutes. Season with salt and pepper and sprinkle with fines herbes. Serve.
