Belgian - Hearty Winter Vegetable Soup

Ingredients
|
- 4 Ounces Bacon -- chopped
- 1 Medium Onion -- chopped
- 10 Medium Brussel Sprouts -- halved
- 1 Cup Carrots -- diced
- 1 Small Celeriac -- peeled and diced
- 1 Small Turnip -- peeled and diced
- 2 Medium Potatoes -- peeled and cubed
- 5 Cups Chicken Broth
- Salt And Pepper -- to taste
- 2 Tablespoons Parsley -- chopped

Directions
|
saute bacon in a heavy pot, about 5 mintues. Add onion and saute for 5 more minutes. Add remaining vegetables and broth, bring to a boil and reduce heat. Simmer, covered, for 25 minutes. Season with salt and pepper and sprinkle with parsley.
