Belgian   -   Hearty Winter Vegetable Soup   adapted from Everybody Eats Well In Belgium

  • 4 Ounces Bacon -- chopped
  • 1 Medium Onion -- chopped
  • 10 Medium Brussel Sprouts -- halved
  • 1 Cup Carrots -- diced
  • 1 Small Celeriac -- peeled and diced
  • 1 Small Turnip -- peeled and diced
  • 2 Medium Potatoes -- peeled and cubed
  • 5 Cups Chicken Broth
  • Salt And Pepper -- to taste
  • 2 Tablespoons Parsley -- chopped
Directions saute bacon in a heavy pot, about 5 mintues. Add onion and saute for 5 more minutes. Add remaining vegetables and broth, bring to a boil and reduce heat. Simmer, covered, for 25 minutes. Season with salt and pepper and sprinkle with parsley.
Serves 6
