Belgian - Mashed Potatoes And Leeks

Ingredients
|
- 2 Medium Idaho Potatoes -- peeled and cubed
- Salt -- to taste
- 2 Large Leeks -- chopped
- 3 Tablespoons Unsalted Butter
- 2/3 Cup Half And Half
- 1/2 Cup Chicken Broth
- Pepper -- to taste
- Nutmeg -- to taste

Directions

Boil potatoes in saucepan for about 20 minutes. Drain and mash well. In skillet, saute leeks in butter for about 5 minutes. Add cream and chicken broth. Season with salt, pepper and nutmeg. Simmer, covered for 15 minutes. Drain the leeks, but save the liquid. Return the liquid to a saucepan and cook until reduced by half about 5 minutes. Mix potatoes and leeks together and stir in sauce. Serve.
