Aztec   -   Feathered Serpent Beans   adapted from The Aztec Way by Sonja Atkinson

  • 1 Cup Anasazi Beans -- Cooked
  • 1 Medium Onion -- Chopped
  • 1 Teaspoon Salt
  • 1 Can Tomatoes -- Chopped
  • 1 Teaspoon Chili Powder
  • 6 Tablespoons Honey
  • 2 Teaspoons Cilantro -- Chopped
  • 8 Large Eggs -- Beaten
  • Salsa
Directions Combine all ingredients except eggs and salsa. Cover with 1 cup water. Simmer for 20 minutes. Cook eggs over easy or hard cooked. Serve a scoop of beans, topped with 2 eggs and douse with salsa.
