Aztec - Feathered Serpent Beans

Ingredients
|
- 1 Cup Anasazi Beans -- Cooked
- 1 Medium Onion -- Chopped
- 1 Teaspoon Salt
- 1 Can Tomatoes -- Chopped
- 1 Teaspoon Chili Powder
- 6 Tablespoons Honey
- 2 Teaspoons Cilantro -- Chopped
- 8 Large Eggs -- Beaten
- Salsa

Directions
|
Combine all ingredients except eggs and salsa. Cover with 1 cup water. Simmer for 20 minutes. Cook eggs over easy or hard cooked. Serve a scoop of beans, topped with 2 eggs and douse with salsa.
