Aztec - Olla Lamb

Ingredients
|
- 3 Pounds Lamb -- Cubed
- 3 Medium Jicama -- Cubed
- 1 Bunch Scallion -- Chopped
- 2 Cloves Garlic -- Chopped
- 2 Tablespoons Olive Oil
- 4 Medium Carrot -- Sliced
- 4 Stalks Celery -- Chopped
- 1 Medium Bell Pepper -- Chopped
- 1 Can Tomatoes -- Chopped
- 2 Teaspoons Salt
- 4 Cups Beef Broth

Directions
|
Saute garlic and scallions in oil for 10 minutes. Add lamb and broth. Bring to a boil. Add jicama, carrots, celery, bell pepper and tomatoes. Simmer for 1 hour. Add salt and serve with rice.
