Aztec   -   Olla Lamb   adapted from The Aztec Way by Sonja Atkinson

Ingredients
  • 3 Pounds Lamb -- Cubed
  • 3 Medium Jicama -- Cubed
  • 1 Bunch Scallion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 2 Tablespoons Olive Oil
  • 4 Medium Carrot -- Sliced
  • 4 Stalks Celery -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 2 Teaspoons Salt
  • 4 Cups Beef Broth
Directions Saute garlic and scallions in oil for 10 minutes. Add lamb and broth. Bring to a boil. Add jicama, carrots, celery, bell pepper and tomatoes. Simmer for 1 hour. Add salt and serve with rice.
