Aztec   -   Spicy Chicken   adapted from The Aztec Way by Sonja Atkinson

  • 3 Pounds Chicken -- In Large Pieces
  • 1/2 Cup Cornmeal
  • 1/4 Cup Whole Wheat Flour
  • 2 Teaspoons Chili Powder
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Cumin
Directions Combine cornmeal, flour, chili powder, garlic powder, salt and cumin. Coat chicken in this mixture. Place in a baking dish and bake for 45 minutes at 400 degrees. Turning once.
Serves 4
