Brazilian   -   Arroz Com Camaroes (Rice With Shrimp)   adapted from Tasting Brazil by Jessica Harris

  • 2 Tablespoons Olive Oil
  • 1 Large Ripe Tomato -- finely chopped
  • 1 Small Onion -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 2 Cups Cooked Rice
  • 1 Pound Medium Shrimp -- cooked
  • Salt And Pepper -- to taste
  • Habenero Pepper -- to taste
Directions Heat oil in skillet over medium heat. Add tomato, onion, garlic and cook stirring until the onion is translucent. Add rice and shrimp. Stir well. Season with salt, pepper and habenero. Cook until heated through. Serve.
