Brazilian   -   Brazilian Rice (Arroz Brasileiro)   adapted from Brazilian Cookery by Margarette De Andrade

  • 2 Cups Rice -- Uncooked
  • 3 Tablespoons Olive Oil
  • 1 Medium Onion -- Finely Chopped
  • 1 Large Tomato -- Chopped
  • 2 Cups Boiling Water
  • 1 Teaspoon Salt
Directions Saute onion in oi until browned. Add rice and saute for 5 minutes. Add tomato and saute for 3 minutes. Pour in water and salt. Bring to a boil, cover and reduce heat to low. Simmer 25 minutes.
Serves 4
