Brazilian   -   Chayote Con Ajis (Brazil)   adapted from hot & spicy latin dishes

  • 3 Medium Chayote Fruit -- cubed
  • Water -- for boiling
  • 1/2 Teaspoon Salt
  • 2 Tablespoons Olive Oil
  • 1 Medium Onion -- chopped
  • 2 Cloves Garlic -- finely chopped
  • 2 Medium Chopped Aji Chiles -- or wax chiles
  • 1 Cup Corn
  • 1 Tablespoon Cilantro -- finely chopped
  • 1/4 Cup Parmesan Cheese
Directions boil the chayote in salted water for 5 minutes or until barely done. drain and reserve. heat oil in large skillet and saute the onion, garlic and chile until the onion wilts. add chayote to the skillet, along with the corn. and saute for a minute or two. sprinkle the sauteed mixture with the cilantro and cheese. heat until the cheese just starts to melt. serve.
