Brazilian   -   Chicken Ensopada   adapted from Brazilian Cookery by Margarette De Andrade

  • 1 Lemon Lemon Juice
  • 1/4 Cup Parsley -- Chopped
  • 3 Tablespoons Olive Oil
  • 1/4 Cup Vinegar
  • 1 Teaspoon Savory
  • 1 Teaspoon Garlic Powder
  • Salt And Pepper -- To Taste
  • 1 Teaspoon Mint
  • 1 Teaspoon Coriander
  • 3 Pounds Chicken -- In Four Pieces
  • 1 Tablespoon Butter
  • 1 Cup Tomato Sauce
  • 1/2 Cup Water
Directions combine all ingredients together, except butter chicken tomato sauce and water. Stir well, marinate chicken overnight in marinade, saute chicken in butter until well browned. Add marinade, cover, simmer 10 minutes, add tomato sauce and water, cover simmer, 30 minutes. Serve with Mashed potatoes
