Brazilian   -   Couscous With Chicken   adapted from The Art of South American Cooking

Ingredients
  • 1 Lemon Lemon Juice
  • 1/2 Teaspoon Lemon Peel -- grated
  • 1 Medium Onion -- finely chopped
  • 2 Cloves Garlic -- finely chopped
  • Salt And Pepper -- to taste
  • 1 Teaspoon Ground Coriander
  • 2 Tablespoons Olive Oil
  • 1/4 Cup White Wine Vinegar
  • 1/2 Cup Tomato Sauce
  • 1/2 Cup Water
  • 3 Pounds Chicken Breast
  • Couscous -- cooked
Directions Combine all ingredients excect couscous in large pot. Simmer for 1 hour. Prepare couscous and arrange chicken over. Pour sauce over and serve.
