Ingredients
  • 2 Pounds Lobster Meat
  • 1 Clove Garlic -- finely chopped
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Cilantro -- finely chopped
  • Salt And Pepper -- to taste
  • 2 Lemons Lemon Juice
  • 2 Tablespoons Olive Oil
  • 2 Medium Onions -- sliced
  • 1 Small Bell Pepper -- chopped
  • 1 Large Tomato -- chopped
  • 3/4 Cup Coconut Milk
Directions Marinate lbster in garlic, salt, pepper, cilantro, and lemon juice, 2 hours.
Heat oil in skillet, add onion, pepper, tomato, cook 7 minutes. Add lobster and marinade, cook 5 minutes. Add coconut milk, bring to boil, simmer 3 minutes.
Serves 4
