Brazilian   -   Oxala's Rice (Brazil)   adapted from hot & spicy latin dishes

  • 1 Small Onion -- chopped
  • 1 Medium Dried Crushed Malagueta Chile -- or thai chile
  • 2 Tablespoons Olive Oil
  • 1 Cup White Rice
  • 1/2 Cup Boiling Water
  • 1 1/2 Cups Coconut Milk
Directions saute onion and chile in oil until onion is soft. add rice and continue to saute until rice turns opaque. combine water and coconut milk. bring to a boil. add rice mixture and bring back to a boil. lower heat and cover, simmer for 30 minutes or until rice is tender. fluff rice and serve.
