Brazilian   -   Sausages And Lentils   adapted from The South American Cookbook by Cora, Rose and Bob Brown

  • 1 Pound Spanish Sausages -- Sliced
  • 1 Cup Lentils -- Cooked
  • 1 Medium Onion -- Sliced
  • 1 Clove Garlic -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 1 Can Tomatoes -- Chopped
  • Salt And Pepper -- To Taste
Directions Saute sausages for about 5 minutes. Drain off all but 2 tablespoons of oil. Add lentils, onion, garlic and bell pepper. Saute for 10 minutes. Add tomatoes, salt and pepper. Simmer for 10 minutes and serve over rice.
